Science Week lecture on Computational Gastronomy for classes 10 and 11

The Indian School organised an insightful lecture titled “Computational Gastronomy: Blending Food with Artificial Intelligence” for the students of Classes X and XI on 18 August 2026 during Science Week at School. Prof. Ganesh Bagler, Professor at the Infosys Centre for Artificial Intelligence, IIIT-Delhi, and a pioneer in the emerging discipline of computational gastronomy, conducted the session.

Prof. Bagler introduced students to the core concept of transforming culinary art into computable data, demonstrating how artificial intelligence, data science, and molecular informatics can decipher ingredients, recipe architectures, flavour pairings, and regional cooking traditions. He explained how machine learning algorithms analyse vast databases of dietary patterns to generate novel flavour pairings, predict nutritional balance, and formulate innovative recipes. The discourse examined the intersection of computational modelling and professional gastronomy, showing how data-driven tools can augment human culinary creativity and help professional chefs worldwide develop progressive menus. The session prompted lively interaction, with students asking questions about algorithmic gastronomy, chemical flavour compounds, and the broader implications of technology for transforming future food systems and sustainable diets.
